Jalapeno Popper Dip


This is SUCH a yummy dip, and has been a hit whenever we've made it, I thought I'd post the recipe:


2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained (I don't think this size actually exists - I usually get a 7 oz can and use half or a little more)
1 cup grated Parmesan cheese


Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
Microwave on High until hot, about 3 minutes. Top with a little more Parmesan cheese that's been combined with about 1/4 cup Panco bread crumbs. Put under the broiler till browned. Love it, Love it, Love it!

A Challenge


OK Barbara, this one's for you. This is a picture of Barbara and I at grandma and grandpa's house in Provo in 1965. The cat I'm torturing looks like Penny, but I'm not 100% sure. Look how cute you are in this picture B!

My little sister Barbara issued a challenge to my big sister Catherine and I and all who are brave enough, to post childhood pictures over the next several weeks. During one of our annual girl get-a-way's we discovered that she in particular went through a significantly "awkward" stage. Yea, that's what I'll call it. It was unfortunate, but luckily didn't last. She was a darling little girl and now is a beautiful woman. Really, we all go through awkward stages don't we? Like most things in life, it's easier to go through hard things together, and so she and I and Catherine will hold each others hands through the "big reveal". So Good Chicken Salad

I made this for the Baby Shower we held for Amy last week. C asked for the recipe, so it now qualifies for a sister recipe! You can use either chicken or turkey. I think it's better made the day before ~ if you do this, you will probably need to add a little more mayo to moisten it up. Enjoy!

So Good Chicken Salad

2-3 cups diced chicken
2 cups celery diced
1/2 tsp salt
2 T minced onion
2 T lemon juice
1 1/2 cups mayo
3/4 cups shredded cheese
1 cup crushed potato chips
1/2 cup sliced almonds

Mix all together and enjoy!

More Temple Thoughts

Why Draper? It's my favorite, and the first temple where we (k and I and all my kids & their significant others) did a session and all arrived in the celestial room together. That will always be the best moment of my life!

I think it's very strange how the temple ladies treat you like a bride when you go to be sealed. At least I felt strange. We've been married for almost 11 years. . . They even tried their best to talk me into going out the "special" door for pictures. Yea, strange.

Jamie was my escort ~ that was fun! I was hers and she was mine. Our witnesses were Cam and Tylor. Brady was in California that weekend volunteering for his brother Greg. Greg needed a "patient" to pass his dental practicals on.

A Special Saturday




It's official - Kent and I were sealed in the Draper Temple on April 17th. We didn't want to make a big deal about it, which is why you're just hearing about it now. That felt like the right decision until we got to the sealing room, and then I was sorry the rest of my family wan't there. So I'm sorry I didnt tell you now. . . . The weather cooperated nicely, and it was a beautiful day! We took the kids to Guadalahonkys after for some good Mexican food.

Black Bean and Corn Salad


This is a yummy, good-for-you salad that we took to a family farewell this past weekend:


Black Bean and Corn Salad


1/3 cup fresh lime juice
1/2 cup olive oil
1 clove garlic, minced
1 teaspoon salt
1/8 teaspoon ground cayenne pepper
2 (15 ounce) cans black beans, rinsed and drained
1 1/2 cups frozen corn kernels
1 avocado - peeled, pitted and diced
1 red bell pepper, chopped
2 tomatoes, chopped
6 green onions, thinly sliced
1/2 cup chopped fresh cilantro (optional)
Fritos Corn Chips


Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.
In a salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro. Shake lime dressing, and pour it over the salad. Stir salad to coat vegetables and beans with dressing, stir in corn chips, and serve. I added 2 avacados - can you ever have too many?
